Every pizza at Fire In The Bricks starts with a dough of just four ingredients: imported flour, yeast, sea salt and water. The kitchen follows the guidelines of the Associazione Verace Pizza Napoletana (VPN), which preserve the centuries-old methods behind Neapolitan pizza. Each pie bakes in a wood-fired oven in under 90 seconds, giving it a tender crust and a soft center.
The Margherita Pizza is the simplest way to taste what that dough can do, and the Margherita DOP Pizza is another way to enjoy the same classic style. For more on top, the menu includes Pepperoni Pizza, Calabrese Pizza, the bold Fire in the Hole Pizza and a Clam Pizza. Beyond pizza, there are pasta dishes and entrées like spaghetti and meatballs and asiago gnocchi, prepared with house-made sauces and quality toppings.
